Ingredients (for about 4 servings):
1 14.4 oz. can of La Cima Hearts of Palm Medallions
3 tablespoons of squeezed lime juice
1 cup of small tomatoes, cut in half
1/4 cup of thinly sliced green onion
1/2 cup of chopped cilantro (optional)
Sea salt to taste.
Dice the avocados and mix them with 2 tablespoons of lime juice. Dice the tomatoes, and slice the onions. Mix the Hearts of Palm with the rest of the ingredients and add another tablespoon of lime juice. Use sea salt to taste and add the cilantro (if using) to the salad.
